After last week's baked Alaska scandal - which led to Iain hanging up his apron and has since also seen Diana leave the show - judges Mary Berry and Paul Hollywood assess the remaining contestants' pastry skills. They begin with a signature challenge of a sweet custard tart of their own invention, ranging from rhubarb and custard to tropical Manchester tart. The technical round involves recreating Paul's recipe for mini pear pies, followed by their showpiece bake - a towering collection of three-tiered pies in just four hours. Along the way, Mel Giedroyc investigates the history of an ancient wedding centrepiece known as Bride Pie

The remaining six bakers have passed the halfway point of the contest, and now face three European bakes - beginning with yeast-leavened cakes, a tricky cross between cake and bread. Mary Berry then sets them the challenge of rustling up a Swedish princess torte, but they have their work cut out completing all 24 stages of the recipe in little more than two hours. They finish by creating their own version of the dobos torte, a multi-layered cake from Hungary. However, they must go one step further and bake a two-tiered version with an emphasis on caramel. Which of the bakers will come to a sticky end?

James Martin is joined by chef Galton Blackiston in Norfolk, and the pair visit Galton's successful fish and chip shop, which inspires James to cook a fish dish on the beach. Later, James heads to Norfolk Lavender to find out why it grows so well in this county and how it is distilled for oil, before making a very special deep-fried soft-boiled egg salad with croutons and bacon

The chef's countrywide tour brings him to London, where he stops off for a bite to eat at new restaurant Core owned by Clare Smyth, and visits a knife forge, where he learns the process of making Japanese-style knives. He also heads along the Thames to the village of Bray, home to the Waterside Inn restaurant. Here he catches up with old friends Michel Roux Sr and his son Alain
